A story about Nậm & Lọc

This is a story about two friends: Bánh Nậm (rice paste with spiced shrimp and  pork) and Bánh Lọc (cassava paste with spiced shrimp and pork). They are similar,  and they are different.

Bánh Nậm


They are the bánh (dishes made of flour or paste) and the renowned specialities of  Huế – the formal capital of Việt Nam. Many travellers come to Huế and search for Nậm & Lọc (these strangers must have heard a lot about them). The local people who live far from home come back and look for the familiar tastes of Nậm & Lọc.

Nậm (made of rice paste) and Lọc (made of cassava paste) both have shrimp and pork in their ingredients. While well-chopped and spiced mixture of shrimp and pork is topped in Nậm, a whole shrimp with shell and a thin piece of pork are visually seen through the transparent coat of steamed cassava paste.

Nậm loves her outfit made of green banana leaf or dong (a kind of leaf whose scientific name is Phrynium placentarium) and wears it all the time. Lọc is a naughty guy. Sometimes he puts on the same banana leaf outfit as Nậm does, but sometimes he just enjoys being uncovered. Huế people call him Lọc Gói (wrapped Lọc) when he has clothes on and Lọc Trần (topless Lọc) when he goes naked.

Bánh Lọc Trần



Both Nậm and Lọc are fond of being steamed in a big steamer. They feel more beautiful and aromatic after going out of that smoky steamer. But there is time when Lọc decides to stay naked, he prefers bobbing on the boiling water.

Although they both like nước mắm (fish sauce) but the nước mắm for Lọc is more salty as his flex is tougher (it’s just my guess). So be sure to dip Lọc and Nậm in the right nước mắm, or you won’t have a good bite of Huế specialties. One more thing, you should have Bánh Nậm with a spoon and have Bánh Lọc with a fork or chopsticks.

Many people admire the slim and tender Bánh Nậm, the others love chewy and sexy Bánh Lọc. How about you?

5 must-try food when you visit Hue

Whether your holiday lasts for 1 day or 2 weeks, you simply cannot miss the opportunity to try famous Hue cuisines. Below is a list of must-eat for you when visiting Hue:

Com Hen

Com Hen (rice with mussel) is a very unique cuisine of Hue. Com Hen contains rice, boiled mussel, star fruit, fish sauce, cabbage, onion, pepper, peanut, chili, and a variety of herbs. The specialty is all of these elements are cold. When people eat Com Hen, they add all the above ingredients to a bowl, and slowly add boiled mussel broth with chili sauce into the bowl (the broth is the only hot thing in Com Hen). Com Hen has an extremely spicy flavor as such, so gastronomes remember it just after one time enjoying.


Bun Bo Hue

Bun bo Hue (Hue style beef vermicelli) or more detail, Bun bo gio heo (beef and pig's knuckle vermicelli) is a popular Vietnamese soup vermicelli dish, and one of the most typical foods of Hue, Vietnam. Fine combination of ingredients make the food famous; the broth is prepared by simmering beef and bones for a long period of time, after that a large range of different spices containing lemon grass and chili are added in. Shrimp paste holds no less importance. Hue people usually add thin slices of beef shank, chunks of boiled oxtail, and pig's knuckles or pork into the bowl. It can also contain cubes of maroon brown congealed pig blood, which are good for those suffering from high blood pressure. The specialty is commonly served with a plenty of herbs like sprouts, lime wedges, cilantro sprigs, onions, and sliced banana blossom. Thinly sliced purple cabbage or iceberg lettuces are used in case of lacking in banana blossom. It is highly recommended for tourists to add a few of shrimp paste directly into the soup.

Banh Beo

Banh beo (water fern cake) is a kind of small steamed rice pancake. The name is to refer from the shape of the cake (like a water fern-Beo in Vietnamese). It is white in color, sometimes nearly transparent and usually has a dimple in the center, which is covered with savory recipes including chopped dried or fresh shrimp, scallions, mung bean paste, crispy fried shallots, fish sauce, rice vinegar, and oil.


Banh khoai

Banh khoai (delicious pancake) is so much like Banh xeo (sizzling pancake) since they both are made from rice flour, water, turmeric powder, added slivers of fatty pork, shrimp, bean sprouts and then pan fried. Banh khoai and Banh xeo also are wrapped in mustard leaf, lettuce leaves or rice paper, and stuffed with variety of herb, like mint leaves, basil and served with a sweet and sour mixed sauce. In Hue, Banh khoai is placed open-face instead of being folded in half like Banh xeo. Moreover, Banh khoai always goes with a fermented soy bean sauce, and people consider it a winter food owing to its greasiness and spicy taste of the sauce. Therefore, most Hue citizens only make them when winter coming.


Mam tom chua

The central of Vietnam is reputable for its Mam tom chua (sour shrimp sauce) and Hue is the best place for this unique sauce. Unlike normal shrimp sauce (has brown color and smooth surface), Sour shrimp sauce has orange color while shrimps still keep its original shape. It is quite simple to make this sauce. First, shrimps are clean by salt water (do not use normal water to avoid bad smells) and “cook” by strong rice wine. The shrimps will turn red. After that, carefully mix the shrimps with sticky rice, sliced lesser galangal, garlic and chili. Slowly put all the mixture into a jar covered by guava leaves. Just need to wait for 5-7 days and we have the mouthwatering sour shrimp sauce of our own making. This is the best sauce for boiled pork with vermicelli.

Bún Bò Huế (Spicy Beef Noodle Soup aka Hue Style Beef Noodles)

Although the translated name for Bún Bò Huế is Spicy Beef Noodle Soup, it is not to be confused with Phở the other “beef noodle soup”. Phở is from the northern region and the flavors are much more settled, bún bò huế on the other hand, is hot and spicy with essence of lemongrass and shrimp paste. Noodles for phở are flat, while noodles for bún bò huế are fat and round (there are many types of noodles with unique names, but in English there is only the term “noodle” which all must be grouped under…sad)
Bún bò Huế is a popular Vietnamese soup containing rice vermicelli (bún) and beef (bò).Huế is a city in central Vietnam associated with the cooking style of the former royal court The dish is mildly spicy and the predominant flavor is that of lemon grass.Compared to phở or bún riêu, the noodles are thicker and more cylindrical.
Bun bo originated in Hue, a former capital of Vietnam. The term bún bò Huế is used more by people from northern or southern Vietnam. In central Vietnam, it is known simply as bún bò. The broth is prepared by simmering beef bones and beef shank with lemongrass and then seasoned with fermented shrimp sauce and sugar for taste. Very spicy chilli oil is added later during the cooking process.
Bun bo usually includes thin slices of marinated and boiled beef shank, chunks of oxtail, and pig's knuckles . It can also include cubes of congealed pig blood, which has a color between dark brown and maroon, and a texture resembling firm tofu.

Bun bo is commonly served with lime wedges, cilantro sprigs, diced green onions, raw sliced onions, chili sauce, thinly sliced banana blossom, red cabbage, mint, basil, perrilla, persicaria odorata or Vietnamese coriander (rau ram), saw tooth herb and sometimes mung bean sprouts. Thinly sliced purple cabbage is acceptable substitute when banana blossoms are not available. Purple cabbage most resembles banana blossom in texture, though not in taste. Fish sauce and shrimp sauce is added to the soup according to taste.

Nhã nhạc is a form of Vietnamese court music. Vietnamese court music is very diverse, but the term nhã nhạc (Hán Tự雅樂, meaning "elegant music" or "ceremonial music") refers specifically to the Vietnamese court music performed from the Trần Dynasty of the 13th century to the Nguyễn Dynasty, which ended in the early 20th century.

Vietnamese court music was performed at annual ceremonies, including anniversaries and religious holidays, as well as special events such as coronations, funerals or official receptions, by highly trained and skilled court musicians. Along with the musicians, a number of intricate court dances also exist (see Traditional Vietnamese dance). Both musicians and dancers wore elaborately designed costumes during their performances.
While the largest foreign influence on nhã nhạc came from the Ming dynasty court of China[citation needed], later on there were also adapted a few elements from the music of Champa, which the Vietnamese court found intriguing.

Instruments
Instruments commonly used for nhã nhạc include kèn bầu (conical oboe), đàn tỳ bà (pear-shaped lute with four strings), đàn nguyệt (moon-shaped two-string lute), đàn tam (fretless lute with snakeskin-covered body and three strings), đàn nhị (two-stringed vertical fiddle), sáo (also called sáo trúc; a bamboo transverse flute), trống (drum played with sticks), and other percussion instruments.

Development during the Nguyễn Dynasty
It is believed that nhã nhạc did not truly reach the pinnacle of its development until the Nguyễn Dynasty, when it was synthesized. The Nguyễn emperors declared it as the official court music, and it became an essential part of the extensive rituals of the royal palace.


UNESCO
Nhã nhạc is still performed in the old capital of Huế. 'Nhã nhạc of Huế court' (Vietnamese: Nhã nhạc cung đình Huế) was recognised in 2005 by UNESCO as a Masterpiece of the Oral and Intangible Heritage of Humanity. Extensive efforts have gone underway to preserve this truly unique and highly developed art.

Hue Citadel Introduction

Hue has chosen to be the capital city of the Southern Kingdom by all Nguyen Lords and officially became the capital under Tay Son'reign. For approximately 400 years, Hue has become a great landscape and architectural site. Hue' royal complex has been officially recognized by the UNESCO as a World Heritage Site.

Situated on the Northern bank of the Perfume River, with an area of 500 ha and a system of three circles of ramparts, namely from outside to inside: Kinh Thanh (Capital Citadel), Hoang Thanh (Royal Citadel) and Tu Cam Thanh (Forbidden Citadel).

 The Ngu Binh Mountain in the South is used as a front screening elevation. The Con Hen and Con Da Vien (both are sand dunes) on the Perfume River are chosen as geomancy condition "dragon on the left, tiger on the right" to protect the capital city.

This construction stared in 1805 under the reign of Emperor Gia Long and completed in 1832 under the reign of Emperor Ming Mang. Under Nguyen' reign, Kings have ordered to build ramparts, palaces and constructional works of royal. Over 200 years to now, it is still original with nearly 140 small and large constructions.

The Citadel, square in shape and almost 10 km in circumference, 6 m high, 21 m thick and 10 entrances. On the top of the walls that surround it, 24 bastions are established for defensive purposes. Besides, the Citadel has an ancillary gate connecting the Tran Binh Bastion called the Thai Binh Mon (Peace Gate).

The Imperial City is located in the centre of the Citadel where established highest offices of Viet Nam's feudalism and sanctums honouring the cult of decreased Emperors. The Citadel, also has a nearly square form, with more than 600m long for each side, built of brick 4m high, 1m thick, around which is ditched a system of protection trench. Access to the Imperial City can be made by four entrance gates. Noon Gate is only used for the King. Royal Palace consists of more 100 beautiful constructional works divided many sectors.

From the Ngo Mon to the Thai Hoa Palace: This is the place for setting up various grand ceremonies.
Sector for worship shrines of the King of the Nguyen dynasty: Trieu Mieu, Thai Mieu, Hung Mieu, The Mieu and Phung Tien place.
Sector for internal affairs office: Storehouse for precious objects, workshop for manufacturing various useful articles.
Sectors for the Kham Van palace and the Co Ha garden: place where the princes are studying or enjoying.
Tu Cam Thanh (Forbidden citadel):

Located inside the Imperial City, behind the Throne Palace, the Forbidden Purple City is reserved for Emperor and his family. Constructed early in Emperor Gia Long'reign in 1804 with brick walls 3.72m high, 0,72 m thick, about 1,230 m in circumference. Its front and back sides are 324 m each while either left and right side is more than 290 m including 50 architectural constructions of different sizes and 7 gates for facilities of entrance and exit. Dai Cung Mon (the Great Place Gate) is in the front side for Kings. Can Chanh Palace (the place for every day working of Emperors). Can Thanh (Emperor's Private Palace), Khon Thai Residence (Queen's Private Apartment) reserved for the Queen. Duyet Thi Duong house (Royal Theatre), Thuong Thien (the kitchen for the King' food), Thai Binh Lau (King's reading room)... Besides, Hue is also famous for royal tombs and temples of Nguyen Kings. Seven tombs with different aspect are not not only a wonderful arch but also combining beautiful, imposing nature and poetic of Hue.

Ancient Hue including Huong River and Ngu Mountain, palaces and citadels, tombs and temples with hundred of historic years are being embellished and recovered by material contribution of Vietnamese and International community in order to keep Hue City as cultural heritage of World.
